Thyme de Provence is a fragrant perennial herb with soft grey-green leaves and pink flowers, known for its slightly spicier flavor and use in classic French cuisine like Herbes de Provence and bouquet garni.

It pairs well with tomatoes, peppers, eggplants, oregano, and alpine strawberries. Harvest fresh sprigs as needed or dry in small bunches. Traditionally used for digestion, thyme pairs well with Mediterranean dishes, spice blends like Za’atar, and even sweet recipes with honey.
